Beet Me Up Scotty

Gin Fizz meets Saturn meets A BUNCH OF BEETS   

The tiki in this one is…subtle. It’s basically a riff within a riff, inspired by two of our favorite gin cocktails. We wanted to create something that visually pops AND tastes delicious too! So we infused some @plymouthginus with fresh beets for 48 hours and started tinkering before coming up with this final recipe.    
   
INGREDIENTS:   
1 oz lemon juice   
3/4 oz strawberry syrup   
1/4 oz velvet falernum   
1 1/2 oz beet-infused gin   
1 medium egg white   
Soda water   
Garnish: none   
   
DIRECTIONS:   
Combine all ingredients except the soda water in a shaker and dry-shake without ice for 8-10 seconds. Add a large ice cube and shake very well. Double strain into a chilled glass and top with about 1 oz of soda water.
